This series is aimed at the true knife aficionado or professional chef. It can only be produced in relatively modest quantities and the UK are privileged in being one of only three countries in the world which will witness the introduction of these knives. The Global Sai range has been developed by Komin Yamada who also designed the first Global knife. Yamada tells us that, ‘The Global knife became, and is still, a truly Global product and a design classic that has found its way into practically every food lovers home throughout the world’. But the world has changed since Komin Yamada first designed Global knives and the new Sai range has been designed to reflect that. The brief given to Yamada was to design a new range of Global knives and his starting point was the world today, the contemporary zeitgeist.


The blade material consists of a central core material of substantial hardness to keep an extremely hard edge, being surrounded by layers of softer, corrosion resistant stainless steel. The outer edges of the blade are made from the same steel as the handles making the forge between blade and handle even stronger.

This brand new handle design, utilising Global’s decades of experience, has been designed in consultation with many chefs and knife experts to allow the utmost comfort and safety in use. The Sai range has 7 dots along the handle instead of the fully dotted handles of the Classic range. This is to represent the traditional Japanese bushido- way of the warrior where there are 7 virtues of the samurai; Gi (Integrity), Yuu (Courage), Jin (Compassion), Rei (Respect), Makoto (Honesty), Meiyo (Honour) and Chuugi (Loyalty).

The special individually hammered finish not only looks stylish but also is designed so that the small hollows create air pockets between chopped food, assisting and allowing food to pass across the blade without sticking. The 12.5-degree bevelled edge is mirror-polished by hand for exceptionally long-lasting sharpness.
